Monkey Tail Bread and Strawberry Jam

No, it is not a pregnancy craving, but what I made this evening with the help of Chris. We had some bananas turning mighty brown and since the oven was already running, I figured we should whip up a quick batch of bread.

It is super-easy to make. Follow your own banana bread recipe and add a packet of chocolate pudding to the batter. I always add a little extra banana in there to make up for the extra dry part.

Then, when dinner took longer than anticipated, I decided to make some strawberry jam with strawberries that were starting to taste a little fermented but had no mold growing on them.

Now I just have to hope it jelled!

Between now and the arrival of baby number #2, I would like to get a few things frozen. I have a ton of zucchini to use up (I will be making Pineapple Zucchini Bread and Pseudo-Strawberry Jam using zucchini and strawberry jello) and would like to incorporate more of my pantry staples into freezer meals. Have a good freezer-friendly recipe? I’d love to see it!
